The variety Phaseolus spp. was born in Central America, in particular in Mexico, where it has been cultivated since 5000 BC and arrived in Europe during the first ocean crossings. Rich in iron, phosphorus and potassium, it is a legume with sweet and compact pulp, but at the same time tender.
