Black-eyed beans

Originally from West Africa and then widely cultivated by the Greeks and Romans, here’s Vigna Unguiculata or black-eyed bean: a herbaceous species of the Fabaceae family.

An important source of protein, it is a precious and uncommon legume despite its very high quality and excellent flavour, rich in vitamins and minerals such as iron, magnesium, potassium and calcium.
